About the event
In this hybrid workshop, participants will explore Fatteh as a symbol of resilience and sustainability, and its place in contemporary food culture, with artist and culinary researcher Mirna Bamieh, joining us online from Lisbon. Exploring bread-recycling recipes rooted in time-honored traditions that emphasize thriftiness, Bamieh highlights how communities under pressure adapt and conserve resources.
The event starts with a discussion on Fatteh’s metaphorical significance, followed by a live cooking demonstration of Fatteh Ghazawieh, made with stale bread. Participants will cook along in the Biennale’s Kitchen, guided by Levantine food writer Barbara Massaad.
A ten-minute short film, "Fattoush", by Sophia Stamatopoulou-Robbins, will also be shown, deepening the conversation on stale bread in Palestine.
